Yummy Gluten Free Buckwheat Waffles anyone?

We have a soft spot for warm filling desserts over here at Vesle and we love these buckwheat waffles. They are just as good on a cold Thursday evening as they are on a lazy Sunday morning. Remember to save the leftovers (if there are any) for the kid’s snack-pack for Daycare.

Try out a traditional waffle iron or the Belgian version, both come out just as well!

Serve your waffles with fresh berries, jam and cream or try it the Norwegian way –with sweet brown cheese. This Buckwheat Waffles Recipe is gluten free and you can have it both sugar and dairy free as well by skipping the palm sugar. Try using dairy free milk and coconut oil instead of milk and butter.

You will need: • 2,5 dl (1 cup) Buckwheat Flour • 1,5 dl (0,5 cup) Almond Flour • 1 tsp Baking Powder • 1/2 tsp Salt • 1/2 tsp Cinnamon • 2 Eggs • 1 tbsp. Coconut Palm Sugar • 2,5 dl (1 cup) Milk • 50 g (1/4 cup) Butter

This is how you do it: 1. Mix the dry ingredients together in a bowl and set aside. 2. Whisk eggs and sugar, then add milk and butter/oil. 3. Slowly whisk in the dry ingredients until just incorporated. 4. Let the batter stand in the bowl for 10 minutes before you use it.
